Gourmet Galley: Pork Chops

Pork Chops With Browned Garlic Butter is a change of pace from the grilled pork chops you have been doing most of the summer. These pork chops have quite a mix of dried and fresh herbs, but the flavors complement each other.

The recipe calls for first rubbing the chops with the dry mix, then dusting with seasoned flour and browning in a skillet. Just that pinch of sage, cumin and thyme adds a subtle flavor change from our usual seasonings. The chops are drizzled with browned butter as soon as they’re cooked. The butter, too, is flavored with garlic, fresh lemon juice and hot pepper sauce.

If you prefer grilling, the chops could be seasoned with the dry mixture, minus the flour, and the Browned Garlic Butter drizzled over the top when they’re done.
