Watermelon Fire and Ice Salsa
Serves 6. Recipe is from the Louisiana Culinary Institute.
3 cups watermelon, seeded and chopped
½ cup green peppers
2 tbls. lime juice
2 tbls. cilantro, chopped
1 tbl. green onions, chopped
1 tbl. jalapeño peppers
½ tsp. garlic salt
Combine all ingredients, mix well. Cover and refrigerate at least one hour. Serve on sliced oranges, cheese-filled manicotti or with chips.
