Ham and Cheese Veggie Omelete
Serves 1. Recipe is from the Louisiana Egg Commission.
2 large eggs, beaten
1 tsp. water
1 tbl. chopped bell pepper
1 tbl. chopped onion
1 tbl. chopped tomato
2 tsps. butter, divided
1 to 2 tbls. chopped ham
1 to 2 tbls. shredded cheddar cheese
Salt and pepper to taste
1. Sauté chopped bell pepper, onion and tomato in 1 teaspoon butter until tender.
2. In a separate skillet, melt remaining butter and add eggs, ham, cheese and sautéed vegetables. Cook until eggs start to get firm. Flip half of the egg mixture over the other half to shape the omelete.
