Roasted Kohlrabi

Serves 4. Recipe is from Inglewood Farm and Hollygrove Market and Farm.

11/2 lbs. fresh kohlrabi, ends trimmed, thick green skin sliced off, diced

1 tbl. olive oil

1 tbl. garlic, optional

Salt, to taste

Good vinegar, to taste

1. Preheat oven to 450 degrees.

2. Toss the diced kohlrabi with olive oil, garlic and salt in a bowl. Spread evenly on a rimmed baking sheet and roast for 30 to 25 minutes, stirring every five minutes after 20 minutes.

3. Sprinkle with a good vinegar and serve immediately.
