Easy Summer Squash
Serves 4. Recipe is from Sarah Losavio.
2 large yellow squash, sliced into rounds
1/4 cup Italian bread crumbs
1/4 cut grated Parmesan cheese
Salt and pepper to taste
1. Put a small amount of water in a 21/2-quart baking dish, such as Corning Ware. Alternate layers of squash rounds and Italian bread crumbs, putting grated cheese on top of each layer. Season with salt and pepper. Repeat layers until dish is filled.
2. Microwave for three minutes or until squash is tender.
