Coleslaw With Dates
Serves 8. Recipe is from “The DASH Diet for Hypertension: Lower Your Blood Pressure in 14 Days Without Drugs” by Dr. Thomas Moore, Dr. Laura Svetkey, Pao-Hwa Lin, Njeri Karanja and Mark Jenkins. Some of the research for the book was done at the Pennington Biomedical Research Center.
11/2 cups shredded green cabbage
11/2 cups shredded red cabbage
1/2 cup chopped pitted dates
2 tbls. olive oil
2 tbls. balsamic vinegar
1 tsp. honey
1/4 tsp. freshly ground black pepper
2 tbls. blanched slivered almonds
1. In a large salad bowl, combine the cabbages and dates.
2. In a small bowl, whisk together the oil, vinegar, honey and pepper. Pour the dressing over the coleslaw, toss lightly, then sprinkle with almonds and toss again.
