Dr. Hannie’s Mint Sauce

Dr. Hannie’s Mint Sauce

Makes about 1 cup. Recipe is by Dr. James Hannie.

1 cup fresh spearmint

2 cloves garlic

Juice of 1 lemon

1/4 to 1/2 cup olive oil

Salt and pepper to taste

1. Wash and towel dry the mint leaves. In a blender, combine mint, garlic and lemon juice. Slowly add the olive oil until the mixture is finely chopped and well blended. Season with a dash of salt and pepper.

2. Spoon about 2 teaspoons of sauce over a serving of sliced fresh tomatoes.
