Sliced Tomato Salad
Serves 4 to 6. Recipe is by Dr. James Hannie.
1 to 2 medium tomatoes, sliced
4 slices round provolone cheese, cut in half
1 bunch fresh basil leaves
Cracked black pepper
1 to 2 tbls. extra virgin olive oil
1 to 2 tbls. balsamic vinegar reduction
1. Alternate slices of tomato and provolone cheese with a basil leaf between each slice, forming a circle around an attractive dinner-size plate.
2. Sprinkle tomatoes and cheese with crushed black pepper and drizzle with olive oil and balsamic reduction. Garnish center of plate with several basil leaves. Serve cold.
