Sauteed Yellow Squash

Sautéed Yellow Squash

Serves 4 to 6. Recipe is from Dr. James Hannie.

3 large yellow squash cut in rounds

1 to 2 tbls. olive oil

3 to 4 tbls. butter

1 onion, diced

1 can Ro-tel tomatoes with green chilies

Juice of 1 lemon

Salt, to taste

1. Wash squash carefully with cold water and slice into rounds.

2. Cover bottom of pan with olive oil. Add the butter, sauté onions; then add squash, tomatoes with chilies and lemon juice in that order and continue to sauté until squash is tender. Salt to taste.
