Cheese Biscuits
Makes about a dozen. Adapted by Beth Colvin from Alton Brown’s Southern Biscuits recipe. After eating all that delicious (and rich) food at the food-truck Wround-Up with Andrew Zimmern, dinner was a challenge. In the end, I kept it simple with soup and Cheese Biscuits.
Scant cup of skim milk
1 tbl. vinegar or lemon juice
2 cups flour
4 tsps. baking powder
1/4 tsp. baking soda
3/4 tsp. salt
4 tbls. chilled butter or margarine
1 cup shredded cheddar cheese
1. Preheat oven to 450 degrees.
2. Put vinegar or lemon juice in a liquid measuring cup. Add milk to bring it to the 1-cup line. Let stand for five minutes.
3. In a large mixing bowl, combine the flour, baking powder and baking soda. Cut the butter into the dry ingredients until the mixture looks crumbly.
4. Add the milk and cheese, stirring just until it comes together.
5. Drop by heaping tablespoonfuls onto a greased baking sheet.
6. Bake 15-20 minutes, or until the biscuits are golden brown.
