Creamed Spinach and Artichokes
Serves 6 to 8. Recipe is by Julie Kay.
1 (28-oz.) pkg. frozen spinach, partially thawed
1 (12-oz.) jar marinated artichoke hearts
2 tbls. butter or margarine
1 small onion, chopped
1 (8-oz.) pkg. cream cheese
½ cup crumbled crackers or french-fried onion rings
1. Put frozen spinach and marinated artichoke hearts, liquid included, into slow cooker.
2. In a small skillet on stove top, sauté onion in butter and add to spinach and artichokes in slow cooker.
3. Cook on Low for 1½ hours. Add in cream cheese and continue cooking for one more hour. Stir well.
4. Remove from slow cooker and top with either crumbled crackers or onion rings.
