Hot Water Cornbread

2 cups cornmeal
1/2 cup flour
2 tsps. salt
2 tsps. sugar
2 tsps. baking soda
3 cups boiling water
Oil for frying
1. Combine the dry ingredients.
2. Add boiling water, stir to combine, then cover the mixing bowl with a plate for a few minutes to allow the dry ingredients to soak up the water and to make it easier to handle.
3. In a heavy skillet, heat 1/4 inch of oil. Form the dough into small patties, about the width of three fingers, and drop into hot oil. Fry for about 2 minutes on each side, or until golden brown.
3. Drain on paper towels. Serve hot.
