Butterscotch Oatmeal Cookies

Butterscotch Oatmeal Cookies

Makes about 2 dozen cookies. Recipe is by Tommy C. Simmons.

6 tbls. Crisco shortening

½ cup brown sugar (light or dark, I use dark)

¼ cup granulated sugar

1 egg

1 tbl. water

½ tsp. vanilla extract

½ cup all-purpose flour

½ tsp. salt

¼ tsp. baking soda

1⁄8 tsp. cinnamon (optional)

1 ½ cups uncooked oats

½ cup grated sweetened coconut

½ cup butterscotch morsels

1. Beat shortening and sugars together. Add egg, water and vanilla and mix.

2. Mix in flour, salt, baking soda, cinnamon, oats and coconut. Stir in butterscotch morsels.

3. Bake on parchment or on a greased cookie sheet at 350 degrees for 10 minutes or until cookie edges are lightly browned. Cool completely.
