It never fails. All of a sudden, you realize you should have planned for more or something didn’t turn out as it should and guests will be arriving in a few hours.

This scenario is especially difficult at Thanksgiving. But, whatever the meal, an added vegetable, more rolls or a quick saladcan usually fill the “hole” at the table, as my mother used to say.

Here’s a slow cooker recipe that couldn’t be easier. Buy a couple of packages of frozen peas, partially thaw, and add cream cheese, onions and a bit of seasoning. In a couple of hours, you have your extra veggie and a tasty one at that, even if you don’t like peas.

Some grocery stores are open, even if it’s just for a few hours, on Thanksgiving for last-minute purchases. You may even have these ingredients on hand. So enjoy your family and friends this holiday as you gather around the table. Happy Thanksgiving to all.
