Bananas Foster (My Mom’s Version)
Serves 4. Corinne Cook says this recipe is from her mother’s recipe box.
2 ripe bananas, peeled and sliced lengthwise
1 tbl. fresh lemon juice
1⁄3 cup light brown sugar
1½ tbls. butter
1⁄8 tsp. cinnamon
About 2 tbls. banana liqueur
¼ cup light rum
1 pint vanilla ice cream
1. Prepare bananas and brush with lemon juice.
2. In 10-inch skillet, melt brown sugar and butter. When melted, add bananas and sauté until bananas are heated through and beginning to brown. Sprinkle with cinnamon.
3. Remove pan from heat and add banana liqueur and rum. Immediately ignite and spoon the flaming sauce over the bananas until flame burns out.
4. Divide bananas and sauce over 4 ice cream servings.
