Hot Gulf Shrimp Dip
Makes about 2¼ cups. Recipe is provided by the Gulf Seafood Marketing Coalition and Family Features Syndicate.
1 lb. wild-caught Gulf of Mexico shrimp, cooked, peeled, deveined and chopped
½ cup chopped yellow onion
½ cup chopped green onion
1 clove minced garlic
3 tbls. mayonnaise
1 tsp. vegetable oil
1 tsp. Creole seasoning, or to taste
½ tsp. fresh ground black pepper, or to taste
¼ tsp. salt, or to taste
1 cup shredded cheese (Cheddar, mozzarella or Monterey Jack), divided
Toasted pitas or sliced and toasted French bread
1. Preheat oven to 350 degrees and lightly spray an 8-inch-by-8-inch baking dish with nonstick coating.
2. In medium bowl, combine shrimp, yellow and green onions, garlic, mayonnaise, vegetable oil, Creole seasoning, pepper, salt and 3/4 cup of the cheese. Mix well then pour into prepared baking dish.
3. Sprinkle remaining cheese over the top and bake for 25 to 30 minutes or until heated through.
4. Serve with pita bread or slices of toasted French bread.
