While the warm summer months are the peak time for cucumbers, local farmers markets still have plenty available.
Native to southern Asia, cucumbers are usually long, cylindrical and with a green, slightly glossy skin, but some varieties are more yellow or white than green.
If using in a salad, select slender ones with smaller seeds.
They should be firm and rounded at their edges. Avoid cucumbers that are puffy, have sunken or are wrinkled at their tips.
Cucumbers are an excellent source of vitamin K and a good source of vitamin C, potassium, magnesium, manganese and vitamin B5. They also contain the mineral silica.
Store cucumbers, unwashed, in a plastic bag in the refrigerator and use within 10 days. Wash thoroughly just before using.
