Salsa Sweet Potato Strips
Serves 4 to 6. Recipe is by Julie Kay.
3 large sweet potatoes, cut into chunky strips
1 (1.25-oz.) pkg. chili seasoning mix
1 (15½-oz.) jar chunky salsa
1⁄3 cup shredded Parmesan cheese
1. Leaving skin on sweet potatoes, cut into chunky strips and put into slow cooker.
2. Add chili seasoning mix and salsa. Cook on Low for 4 to 6 hours.
3. Remove from slow cooker and top with shredded Parmesan cheese.
