Lentils are versatile. Often used as a meat substitute, they are excellent sources of protein and fiber. If you’re looking for something a little different, perhaps for a leisurely lunch or casual dinner, don’t discount lentils.

Ever thought about them in a Sloppy Joe-type sandwich or pita pocket? Be creative with food; it’s easy to think outside the box.

Although colorful lentils are a little harder to find in your neighborhood grocery store, they often make an attractive presentation in your creative sandwich. Since I already had the regular ones on hand, that is what I used, but it’s a good flavor either way.

If there are leftovers, the mixture will either freeze well or you can use it throughout the days ahead for dinners or lunch fare.
