Grilled Peaches With Blueberry-Basil Butter
Makes 6 or 8 halves. Recipe is from Andreé Carr, who says this delicious accompaniment is good with everything from chicken to filet mignon, and it’s so easy to prepare.
½ cup butter, room temperature
¼ cup seedless blueberry or blackberry jelly or preserves
2 tbls. finely chopped fresh basil
3 or 4 ripe peaches, peeled, halved and seeded
1. Using a fork, stir butter, blueberry or blackberry jelly and chopped basil together until well blended. Set aside.
2. Grill peaches, cut side down, until grilled-marked and slightly softened. Remove and serve with Blueberry Basil Butter in the center. These can be reheated in the microwave if necessary.
