Serves 6. Recipe is from “Bienvenidos to Our Kitchen.”
11/2 lbs. medium shrimp
4 qts. water
1 tsp. salt
3 cloves garlic
12 romaine lettuce leaves
12 radishes, cut in florets
12 limes, cut in wedges
1. Shell and devein the shrimp. In a large saucepan, bring the water (with the salt) to a boil. Mince garlic and add to the boiling water. Add shrimp to boiling water, reduce heat and simmer the shrimp for 5 minutes. Discard water, place shrimp in a mixing bowl and let cool. Squeeze lime juice over the shrimp.
2. Cut the avocados in half; discard the pit. Squeeze some lime into each avocado half. On individual salad plates, place two romaine lettuce leaves. Place the halved avocados on top of the leaves. Fill with the shrimp. On the side of the avocado, decorate with radish florets and lime wedges.
