Bananas Foster Waffles
Serves 2. Recipe is by Patrick Ashton, of New Orleans.
¼ cup (½ stick) unsalted butter
½ tsp. cinnamon
1 cup brown sugar (dark preferred)
¼ cup banana liqueur
¼ cup Old New Orleans Rum Cajun Spice (or other good rum)
1. Peel bananas and cut in half lengthwise, then halved.
2. Add bananas, butter and cinnamon in a flambé pan or low-sided skillet. Place pan over medium heat and cook, stirring until the bananas begin to cook, Add brown sugar and the banana liqueur. Combine well.
3. When the banana sections begin to soften and brown, carefully add the rum. Once the rum is hot and the alcohol is vaporizing, tip the pan carefully to ignite the rum vapors. Continue stirring until the flames subside. Generously spoon the bananas and sauce over Belgian waffles and serve immediately.
