Greek Pasta Salad
Serves 12 to 16 as a side dish. Recipe is from Re:, a company in the LSU AgCenter Food Incubator. It makes a salad dressing-marinade.
1 lb. rotini pasta, cooked according to package directions
1 pint cherry tomatoes, cut in half
1 red bell pepper, chopped
1 large cucumber, peeled, seeded and chopped
1/2 red onion, chopped
3/4 cup kalamata olives
11/2 cups crumbled feta
1 bottle Re: salad dressing
1. In a large bowl, combine cooked pasta, tomatoes, bell pepper, cucumber, red onion, olives,and feta.
2. Toss the pasta salad with about two-thirds of the salad dressing until evenly coated. Cover and chill overnight. Immediately before serving, toss salad with remaining dressing to coat. Serve.
