This Shrimp and Orzo Pasta dish is tasty and quick to prepare.
Onions, garlic, mushrooms and tomatoes are sautéed then combined with wine, bell peppers and shrimp.
There is not a lot of sauce but enough to lightly coat the pasta.
Orzo is rice-shaped pasta, but it’s larger than long-grain rice. It’s a nice change from spaghetti and easier to put on a fork.
This dish can be topped off with a generous sprinkle of feta cheese; however, I forgot to add the cheese before taking the photograph.
