Cole Slaw With Cilantro
Serves 6 to 8. Recipe is from Cindy Schexnayder.
1 medium head cabbage (white or red), shredded
½ bunch cilantro, chopped
1 fresh jalapeño pepper, seeded and finely chopped
2 roma tomatoes, chopped
½ small purple onion, thinly sliced
Juice of 1 fresh lime
Salt and freshly ground black pepper to taste
¼ cup Romano Cheese salad dressing or your favorite Italian dressing (She likes Vivianne Romano Cheese brand.)
1. Wash, drain and shred cabbage. Place in large salad bowl.
2. Chop cilantro, jalapeño and tomatoes and place in bowl. Slice onion and add to salad bowl.
3. Squeeze lime juice over salad and season to taste with salt and pepper.
4. Drizzle desired amount of salad dressing over salad. Toss to coat.
