This is a most satisfying and quickly made quiche that everyone liked; even the nonspinach lovers.
Cooked and crumbled bacon on the bottom of the dish enhances the flavors.
Bacon, our favorite breakfast staple, is now taking center stage in all parts of the menu; from candied bacon for appetizers to bacon on desserts.
This recipe is basic and good for brunch or any meal actually.
The eggs, cottage cheese and spinach mixture is poured over the bacon and cheese layer. Once baked, the tasty pie rests for a few minutes then it neatly slices for individual servings. Another serving idea is making these in muffin pans for individual servings.
You can make them in standard muffin tin sizes or in minimuffin pans but you have to shorten the baking time.
