Trees ’n’ Cheese
Makes 8 servings. Recipe is by Beth Colvin. Do not let soup boil.
3 heads fresh broccoli, washed and chopped
1 (32-oz.) container low-fat chicken broth
6 tbls. margarine
1/2 cup chopped fresh Creole seasoning mix
1 tsp. minced garlic
1/2 cup flour
2 cups milk
11/2 lbs. processed cheese food, cubed
Salt and black pepper, to taste
1. In a large pot over medium heat, simmer the broccoli in the broth for 10 minutes or until just tender.
2. In a separate skillet, melt the butter and sauté the seasoning mix and garlic about 5 minutes, or until soft and fragrant. Add the flour and stir until combined, then add the milk and stir until thickened. Pour into the broccoli and broth. Stir until well combined.
3. Add the cheese and stir continuously until melted. Salt and pepper as desired.
