Advocate-Tested Recipe
White Beans and Shrimp
Serves 6 to 8. Recipe is by Julie Kay.
1 (1-lb.) pkg. dried white beans
8 cups water
6 cups vegetable broth
1 (14.5-oz.) can stewed tomatoes
1 tsp. Creole seasoning
4 cloves garlic, minced
1 onion, chopped
3 stalks celery, chopped
1 link andouille sausage, cut into small pieces
1 lb. shrimp, peeled and uncooked
1. Put white beans and water in large pot and soak overnight.
2. Drain beans and place beans in 5- to 6-quart slow cooker.
3. Add vegetable broth, stewed tomatoes, Creole seasoning, garlic, onion, celery and sausage. Cook all on Low for 7 hours.
4. Add shrimp and turn cooker to High. Continue cooking for an additional hour or until shrimp turn pink.
