This recipe for Sweet Potatoes and Fresh Pineapple is different from traditional holiday sweet potato recipes. This one has a lot less sugar and butter, but it does have slices of fresh pineapple over the top. Fresh pineapple and freshly baked sweet potatoes just naturally go together.
To make your job easier, you can purchase a pineapple already peeled and cored (found in the cold section of the produce isle).
All you have to do is slice it and arrange the slices over the sweet potatoes. After the potatoes are baked, this dish takes only about 10 minutes to put together.
