Stock up on Cornish hens when they go on sale. It’s an easy dinner, yet one that can look elegant at the drop of a hat. They are also a great choice for the slow cooker.
They can be transformed into a new recipe with a quick change of sauce. I’ve mixed apricot preserves with Catalina dressing and dried onion soup mix for one of my favorite sauces. This one is an easy, yet light option that can be dressed up at the table with extra lime slices. Any favorite sauce is something that most likely will go well with a Cornish hen.
The 4- to 5-quart slow cooker can fit two to three hens in them. That should be plenty for a family of four, especially if there are children being served.
If hens are still slightly frosty, turn slow cooker on the High setting for the first hour of cooking. Do the same with any meat or poultry that still has frozen places on it. It’s a way for the slow cooker to jump-start the temperature, getting it up to a food-safe heat quickly. Again, the rule of thumb is that each hour on High is the same as two hours on Low, so adjust accordingly.
