Put the black-eyed peas and cabbage on your New Year’s Day table, but how about a change-up on the main dish? A stuffed veal in the slow cooker might be just what the cook is looking for this new year. It’s also an elegant, yet easy offering.
The thin cut of veal makes it a wonderful choice for stuffing. Simply roll up and secure with toothpicks. Pour sauce over all and you’re on your way.
Veal can be a bit on the expensive side and sometimes hard to find so don’t be in a hurry when you need it. Since it does tend to be more costly, it is the perfect dish for a household of two at the holidays.
Serve alone or with pasta of choice. Not a fan of veal? Try a thin round steak instead. The rolled-up meats are easy to make look impressive and the little something extra inside adds an extra dimension to both flavor and color. If you prefer, chop veggies into small pieces and use in place of stuffing.
Slow cooking is great for stuffed dishes because of the moist venue it cooks in. The sauce in this recipe is divided, meaning some of it is poured at the beginning of the cook cycle and the other part added later for both fresher color and bolder taste.
