Persimmon Cookies

Makes about 4 dozen cookies. Recipe is from allrecipes.com.

1/2 cup shortening

1 cup white sugar

1 egg

1/2 tsp. vanilla extract

2 cups all-purpose flour

1/2 tsp. baking soda

1/2 tsp. baking powder

1/4 tsp. salt

1/2 tsp. ground cloves

1/2 tsp. ground cinnamon

1/2 tsp. ground nutmeg

1 cup chopped walnuts

1/4 tsp. salt

1 cup persimmon pulp

1. Preheat oven to 350 degrees.

2. Cream together shortening and sugar. Add egg and vanilla and mix well.

3. Sift together the flour, baking soda, baking powder, 1/4 teaspoon salt and spices. Stir flour mixture into creamed sugar mixture.

4. Stir in chopped nuts, remaining salt and persimmon pulp and mix well.

5. Drop by rounded teaspoonful on greased or parchment-lined cookie sheet. Bake for 12 to 15 minutes. Cool on wire racks.
