Apple Popcorn Brittle
Makes about 7 cups. Recipe is from The Popcorn Board.
1 quart popped popcorn
2 cups apple-cinnamon cereal
1 cup peanuts
3/4 cup apple juice
1 cup sugar
1/4 cuplight corn syrup
1/2 tsp. vinegar
1/4 tsp. salt
1. In a bowl, toss together popcorn, cereal and peanuts. Set aside.
2. Butter the sides of a heavy, 2-quart saucepan. Combine the apple juice, sugar, corn syrup, vinegar and salt, and cook over medium heat, stirring constantly, until the sugar dissolves and the mixture begins to boil.
3. Cook to hard-ball stage, 250 degrees on a candy thermometer, and remove from heat. Pour the syrup over the popcorn mixture and toss to coat.
4. Spread in a buttered 151/2-by-101/2-by-1-inch baking pan. Cool until hardened. Break into pieces.
