Swedish Meatballs (Svenska Köttbullar)
Serves 6 to 8. Recipe is from the booklet “Nordic Food: An Adventure” by the Embassies of Denmark, Finland, Iceland, Norway and Sweden,” given to children who attended Nordic Food Day in the Washington, D.C., public schools.
1/2 cup fine bread crumbs
1 cup milk
14 ozs. ground lean beef
1 large yellow or white onion, diced
2 eggs
11/2 tsps. salt
1/2 tsp. pepper
1. Preheat oven to 400 degrees. In a mixing bowl, soak the bread crumbs in the milk. Set aside for about 15 minutes, or until the bread has soaked up all the milk.
2. Add the beef, onion, eggs, salt and pepper to the bowl with the bread crumbs. With clean hands, mix everything together for about 2 minutes or until all the ingredients are well combined.
3. Form the mixture into meatballs, using a tablespoon to measure out the meat and using your hands to shape the tablespoon amount into a round ball. Continue shaping meatballs until all the mixture is gone.
4. Place the meatballs on a greased baking sheet and put into the oven until cooked, about 8 to 10 minutes.
Note: For a meatless version, substitute textured vegetable protein for the ground beef.
