Coffee Chili

Makes 6 servings. Recipe is by Cynthia LeJeune Nobles.

1 tbl. canola oil

1 cup chopped onion

1 stalk celery, chopped

1 lb. ground beef

½ lb. ground pork

3 cloves garlic, minced

1 (15-oz.) can tomato puree

1 (6-oz.) can tomato paste

1 cup strong-brewed coffee

2 cups beef broth

3 tbls. chili powder

1 tsp. salt

2 tsps. ground cumin

¼ cup chopped cilantro

2 (15-oz.) cans kidney beans, drained

1. Heat oil in a large saucepan over medium heat and sauté onion, celery, beef and pork until meat is brown.

2. Stir in garlic, tomato puree, tomato paste, coffee, broth, chili powder, salt, and cumin. Reduce heat to low and simmer 45 minutes, uncovered, stirring occasionally.

3. Stir in cilantro and beans, and simmer 15 more minutes.
