Baked Buffalo Chicken
Makes 4 servings. Recipe is from Hellmann’s.
1/2 cup mayonnaise
1/2 tsp. cayenne pepper
1/2 cup plain, dry bread crumbs
1 tbl. chopped fresh parsley
4 boneless, skinless chicken breast halves, cut into strips
1. Preheat oven to 400 degrees.
2. Combine mayonnaise and cayenne pepper in small bowl; reserve half for dipping.
3. Combine bread crumbs with parsley. Coat chicken with remaining mayonnaise mixture, then coat with bread crumbs. Arrange chicken on baking sheet.
4. Bake chicken 12 minutes or until chicken is golden brown and thoroughly cooked. Serve with reserved dipping sauce.
