All I need is a cool snap to get a pot of soup on the stove.
Chicken Tortilla Soup is easy to put together and one I made when the temperature dropped last week. It’s a semihomemade recipe using cooked chicken, and canned and frozen vegetables along with the sautéed fresh vegetables. This is a soup all ages enjoy. Pass separate bowls of avocado slices, shredded cheese and sour cream for garnishing.
Each person can add the amount of toppings they desire.
The recipe instructions call for simmering the soup for three hours over low heat. You can easily get by with less time than that if necessary.
