Spanish Rice

Serves 4 to 6. Recipe is from “Slow Cooking for Crock Enthusiasts” by G&s Publishing Co.

2 cups long-grain raw rice

1/2 cup margarine

1 lb. browned ground beef

2 cups tomato juice

11/4 cups water

1 onion, chopped

1/2 cup chopped green pepper

2 tsps. salt

1. Sauté rice in margarine over medium heat until browned. Set aside.

2. Brown ground beef over medium-high heat; mix all ingredients in slow cooker. Stir well to mix.

3. Cover and cook on Low for 5 to 7 hours.
