Banana Nut Muffins
Makes 12 muffins. Recipe is by Corinne Cook.
1½ cups flour
1 tsp. baking powder
1 tsp. baking soda
¼ tsp. cinnamon
½ tsp. salt
3 ripe bananas, peeled
½ tsp. vanilla
¾ cup sugar or ½ cup white sugar and ¼ cup brown sugar
1 large or 2 small eggs
1⁄3 cup melted butter
1⁄3 cup chopped pecans or walnuts
1. Preheat oven to 350 degrees. Line standard-size muffin cups with paper liners. Set aside.
2. In medium mixing bowl, combine flour, baking powder, baking soda, cinnamon and salt. Quickly whisk together to blend. Set aside.
3. In separate bowl, mash bananas then add vanilla, sugar, egg, melted butter and nuts. Mix this banana mixture into the dry ingredients and stir just until well mixed.
4. Spoon into paper-lined muffin tins. Place in preheated 350-degree oven and bake for 25 to 27 minutes or until toothpick inserted in center comes out clean.
