Blue Cheese Dip
Makes about 1½ cups. Recipe is by Corinne Cook.
1 cup cottage cheese (regular or small curd)
4 ozs. blue cheese, crumbled
¼ cup cream or milk
4 sprigs fresh parsley leaves
1 small piece onion (about 2 tbls.)
½ tsp. Worcestershire sauce, or more if you like
Generous dash of Tabasco
Pinch of black pepper
Vegetable strips
Apple or pear slices
Crackers
1. Place all ingredients in food processor and blend until smooth. If mixture appears too stiff, add a few drops of milk or cream until mixture reaches desired consistency.
2. Spoon mixture into small serving bowl. Cover and refrigerate. After mixture has chilled, taste for seasoning; add more pepper or Worcestershire if desired.
3. Serve with vegetable strips, apple or pear slices, or crackers.
