In the summer, it’s nice to have a casual dip for easy entertaining. Here are a couple to try.
Mediterranean Dip can double as a sandwich spread. It’s a blend of mayonnaise and feta cheese and can be adapted to pretty much anything you have on hand as far as spices and seasoning go. I like the tartness of the feta cheese with the garlic, capers and pepperoncini peppers.
It is good with veggie slices, apple or pear slices, crackers or on meaty sandwiches.
Blue Cheese Dip, a blend of blue cheese and cottage cheese, quickly mixes together in the food processor.
The strong flavor of the blue cheese blends with the mild cottage cheese flavor. Like the Mediterranean Dip, Blue Chip Dip also is good with veggie strips, apples or pears, and crackers.
