Serves 3 to 4. Recipe is from Inglewood Farm.
1 large head of cauliflower
2 to 3 tbls. butter
Splash of milk
Salt, to taste
Garlic, to taste
Parsley or chives, optional
1. Rinse cauliflower in cold water.
2. Bring a medium pot of salted water to a boil. Break off small stalks and place into water. Boil for 5 to 10 minutes or until cauliflower crumbles under pressure. Remove from heat and mix in butter and milk.
3. Stir until cauliflower reaches “mashed” consistency.
7. Salt and season to taste, garnish with parsley or chives.
