Cucumber Tea Sandwiches
Serves 24, 2 sandwiches per serving. Recipe is from Taste of Home.
1 (8-oz.) pkg. cream cheese, softened
1/4 cup mayonaisse
1 tbl. snipped fresh dill
1 tbl. lemon juice
1/2 tsp. Worcestershire sauce
1/4 tsp. salt
1⁄8 tsp. cayenne pepper
1⁄8 tsp. black pepper
2 large cucumbers, peeled, seeded and chopped
1/2 cup red bell pepper, chopped
1/4 cup sweet onion, chopped
1/4 cup pimento-stuffed olives, chopped
1/4 cup fresh parsley, minced
12 slices whole wheat bread
1. In a small bowl, combine the first eight ingredients. Set aside.
2. In a larger bowl, combine the cucumbers, red pepper, onion, olives and parsley. Add the dressing. Cover and refrigerate for up to 2 hours.
3. Remove crusts from bread and cut each into four triangles. Spread with the cucumber mixture. Serve.
