Baked Potatoes With Salted Skins
Serves 4. Recipe is from Corinne Cook. Bake them wrapped for soft skins and unwrapped for crisp skins. Cooking times will differ because of size of potatoes.
4 medium Idaho potatoes
Olive oil
Kosher or sea salt to taste
Cajun seasoning to taste if desired for hotness
Butter or toppings of your choice
1. Thoroughly scrub potatoes clean, using a brush. Rinse well under cold water and dry. Using a standard fork or a cooking fork, pierce deeply 3 times.
2. Rub outside with olive oil then sprinkle with Kosher or sea salt. Add Cajun seasoning if you like the skins spicy. Set aside.
3. For crispy skins: preheat oven to 350 degrees and place potatoes directly on oven rack. Bake for 1 hour or until potatoes are tender.
4. For soft, moist skins: Prepare as in steps 1 and 2. Cover potato tightly with foil and bake in preheated 375-degree oven for 1 to 1½ hours or until potatoes are tender.
For speedier method of crisp skins: Prepare as in step 1 and then place unwrapped potato in microwave and cook on high heat for 4 minutes on each side , then place in preheated 400-degree oven for 50-60 minutes, or until potatoes are tender.
